This is a no-flour, no-sugar sweet loaf made with cottage cheese and eggs. High-protein, low-carb, keto-friendly, and diabetic-friendly.
I made this after a long-time follower asked for a sweet version of my 2-ingredient cottage cheese bread. I was not sure it would work the same way. It does. The texture is cloud-light, the lemon lifts everything, and a few slices with fresh strawberries on the side feel genuinely like a treat.
It is also quietly perfect for the Easter table. When everything else is chocolate and heavy, something light and lemon-scented surprises people. Nobody needs to know it is keto and sugar free unless you want them to.
