When I want a quick, easy, and filling chocolate breakfast or dessert with some texture, I make this chocolate cottage cheese parfait.

Chocolate is the flavor I crave the most. I do make fruity desserts too, but if I want something sweet, chocolate is usually what I reach for.

This cottage cheese parfait is basically my change-up from chocolate mousse. Same general lane, different feel. It has a whipped cottage cheese layer, a chocolate chia layer, and a buttery almond crumble on top. The crunch from the crumble is what makes it. Without it, it’s fine. With it, it feels like dessert.

I make this when I want something I can portion into jars and forget about. It’s quick to put together, and it holds up well in the fridge.

It’s high-protein, keto, sugar-free, and gluten-free, and it’s made with diabetic-friendly ingredients.

It’s also an easy way to boost my protein for the day without thinking too hard about it.

The recipe makes two servings, and that’s on purpose. I’m not sharing. I eat one for breakfast, and I’m always happy there’s another one waiting in the fridge for later.

I do it layered when I want it to look nice, and blended into one chocolate base when I just want to eat. If I’m not in the mood for layers, I’ll just make the chocolate chia part and eat it straight. That’s the kind of dessert I actually repeat: simple, dependable, and it pulls its weight.
