My Italian Whipped Cottage Cheese for a 5-Minute Breakfast or Lunch
What I make for fast, savory breakfast or lunch when I don’t have time to cook
When I want something fast, savory, and filling without cooking, I make this Italian whipped cottage cheese.
This is one of those foods I rely on during the week. I usually blend a big tub of cottage cheese when I get my groceries on Saturday, so by the time Monday rolls around, this takes maybe two minutes to throw together. No stove. No pan. Just blend, season, and eat.
I don’t really think of this as a dip, even though that’s how the recipe started. It’s more of a flexible base. I eat it for breakfast, lunch, or a light meal, depending on what I pair it with.
Sometimes it’s a quick plate with a few pepperoni slices and a bell pepper. Sometimes it’s spread thick on toast. Other times, I loosen it slightly and use it like a sauce with whatever protein I already have.
It’s protein-forward, keto, and uses diabetic-friendly ingredients, but what matters to me is that it solves the “I need food now, and I don’t want to cook” problem without feeling like a compromise.
