There are times when I want something crunchy, something flavorful, something to stop me thinking about food. Those times are exactly what these nacho cottage cheese chips are for.
Thin sheet pan chips with taco seasoning, cottage cheese, and parmesan cheese in the batter, finished with cheddar cheese powder. High-protein, low-carb, keto-friendly, 7g protein and 1.5g net carbs per serving. They taste like nacho chips. Not exactly like a tortilla chip, but close enough that you stop thinking about it after the third one.
The nacho seasoning is real. Taco seasoning and smoked paprika in the batter, cheddar cheese powder tossed on after baking. It is the kind of flavor that makes you forget you are eating something with 1.5g net carbs.
I went through a few versions of this recipe before I had a method I actually repeat. The thing that makes most cottage cheese chips frustrating is the texture - crisp edges, soft center, chips that crack in random places instead of separating cleanly. I fixed that with a two-stage bake and one small step most recipes skip. My batch comes out with crisp edges, a lightly crisp center, and clean triangles every time.
Each batch makes 6 servings. I eat these with one of my whipped cottage cheese dips. The feta paprika cottage cheese dip is my favorite. Chips and dip, the whole thing, and it fits the way I eat without me having to think about it.
