This Mediterranean cottage cheese toast is one of them - breakfast when coffee and yogurt are not enough, weekday lunch between calls, the 4pm gap when dinner is still hours away and coffee alone will not hold. The first bite is the part I keep coming back for. Cold tomato and avocado against warm bread, the briny pop of olive, an everything bagel sprinkle, all sitting on a thick layer of cottage cheese that grips everything in place. Sharp against soft, cold against warm, crisp against creamy, on one slice that eats like a real meal.
The base is a cottage cheese mug bread. Five minutes from scratch, and one of the few high-protein low-carb breads that holds topping weight without falling apart.
A handful of fresh vegetables, something briny, something creamy, a sprinkle that pulls it in a Mediterranean flavor direction. All five toppings are almost always in my fridge, which is half the reason this combo became my favorite.
The cottage cheese goes on thick underneath. The vegetables stack cold and bright on top. The bread stays sturdy right through to the last bite, which is not a given with any topping this wet, and it is why the order of assembly matters more than it looks.
