I have nights where I want dinner to feel like real food, not a snack, but I also want it to be easy.
Those are usually taco-flavored nights.
This cottage cheese taco ground beef casserole is what I make when I want something warm, cheesy, and filling without turning dinner into a whole project. It’s high protein, keto, sugar-free, and gluten-free, and it uses ingredients I almost always have around.
It’s also one of those dinners that works well for people putting together diabetic-friendly meals. The protein-forward base makes it feel satisfying without being heavy, which is really what I care about on a normal weeknight.
What I love about this recipe is how flexible it is. I usually make it in one oven-safe pan for less cleanup. Some nights I bake it for that crispy cheese top. Other nights I keep everything on the hob and call it done. And sometimes I do a completely hands-free version and let the oven handle it while I disappear for a bit.
