I do not eat bread all the time, but I absolutely get bread cravings.
Sometimes I want cheese on toast. Sometimes toast with toppings. Sometimes I make a soup or a pasta-style sauce and suddenly want something bready on the side, even if I skip the pasta part.
This cottage cheese mug bread is my fix for that.
It’s high protein, keto, sugar-free, and gluten-free, and it’s ready in about five minutes. With my habit of blending cottage cheese ahead of time, it’s basically one minute of mixing and two minutes in the microwave. Fresh bread energy, without baking a loaf.
