Hot days, when I want a real high protein low carb dessert without being near the oven, I open the freezer. Six chocolate peanut butter cottage cheese ice cream sandwiches sit there waiting. Cookie-dough firm on the outside, creamy peanut butter through the middle. Cold and ready to eat, the second I want one.

High-protein, low-carb, no ice cream maker, no whey, no protein powder of any kind. Each ice cream sandwich is around 152 calories with 10g of protein and 4.5g of net carbs. Big enough to feel like a real dessert, small enough that another one tomorrow is fine too.

Cottage cheese has been everywhere in dessert recipes lately, and most are not… so tasty. You bite in expecting smooth chocolate and what you get is curds. That sour tang sits at the back of the throat under the sweet. You finish it because you made it, not because you actually want to. By the third one I stopped trying other people's and made my own.

What you actually bite into is mostly whipped cottage cheese, which is the part most people would not guess. The chocolate is in the cookie dough. The peanut butter is in both layers. Chocolate and peanut butter are my two favorite flavors together, and this is the version of that combination I keep coming back to.

I make a tray when I have a bit of time and forget about it until I want one. There is something settling about knowing a small dessert is waiting for you in the freezer whenever you need a bit of sweetness in your day.
