When I want dinner cooking while I do other things, I make this cottage cheese taco chicken casserole.
This is an oven-first meal for me. I prep everything once, mix it right in the casserole dish, slide it into the oven, and walk away. No stirring. No babysitting. Dinner handles itself while I answer emails, tidy the kitchen, or sit down for five minutes and reset.
This taco chicken casserole uses blended cottage cheese for the sauce, which makes it creamy and filling without heavy cream. It stays protein-forward and keto, but that is not the point. The point is that it feels like real comfort food and fits into a normal evening.
I like this version because it stays saucy. The chicken cooks gently in the oven, the cheese melts instead of tightening, and the whole thing comes out rich and cohesive. It tastes better to me than a drier skillet version, and I do not have to stand over it.
