4-Minute Cottage Cheese Brownie (Single-Serve, Fudgy, High-Protein)

I get chocolate cravings that are not patient.
I’ll be fine all day, then suddenly I want a warm brownie right now. Not later. Not after preheating an oven and committing to leftovers.
This Cottage Cheese 4-Minute Brownie is my workaround.
It’s rich and fudgy, made with cottage cheese, and ready in about four minutes start to finish. It’s protein-forward enough to feel grounding, not like I’m just chasing sugar, and it uses keto, gluten-free, sugar-free, diabetic-friendly ingredients.
I have a soft spot for mug recipes and microwave desserts. Not because they’re cute, but because they don’t require planning. When a craving hits or my partner starts eating something right in front of me like it’s a hobby, I can make something warm in five minutes and feel completely fine again. Also: when I’m serving friends something not keto, I still want a little brownie moment with my coffee.
It’s also my favorite kind of dessert: one portion. Enough for coffee, not enough to accidentally turn into an all-night brownie eating contest.
I usually make this in a small square microwave-safe glass dish now. It looks more like a real brownie and less like a science experiment. A mug works just fine, too, if that’s what’s clean and closest.
The only thing that actually matters is blending the cottage cheese smoothly. If you do that, the texture is soft and brownie-like, with set edges and a fudgy middle. If you don’t… you’ll understand immediately why I keep mentioning it.
