The Inspiration Behind the Recipe
One of my lovely YouTube followers reached out with a sweet request after watching my 2 Ingredient Cottage Cheese Flatbread: High Protein Low Carb video. She asked, “Is there a sweet version of this recipe?” When I inquired about her favorite flavors, she revealed her love for chocolate, hazelnut, and orange.
Inspired by her preferences, I set out to create a unique recipe that would satisfy her sweet tooth while staying true to the keto lifestyle. The result is this delightful 4 Ingredient Chocolate Cottage Cheese Flatbread. It’s a testament to the power of community and the joy of creating something special for those who inspire us.
Ingredients
1 cup full fat cottage cheese
2 medium eggs
3 tablespoons Swerve or your preferred keto sweetener
2 tablespoons Dutch cocoa powder
Instructions
Preheat your oven to 350°F (175°C).
In a high-speed food processor or immersion blender, blend the cottage cheese, eggs, Swerve, and cocoa powder until smooth.
This step is vital to be done carefully: The secret to this cottage cheese bread recipe is to whip the cottage cheese and egg mixture very well. Make sure that all of the cottage cheese curds are gone. Otherwise, the bread will be lumpy, and the cottage cheese flavor will dominate. You don’t want that in a chocolate flatbread, do you?
You can use an electric mixer or a whisk to whip the egg whites, but make sure they are at room temperature for best results.
Pour the cottage cheese mixture onto a baking sheet lined with parchment paper. You can spray it with cooking spray if it’s too thin.
Spread it evenly to form a thin layer in the form of flatbread.
Bake for 10-15 minutes or until the edges are golden brown and the center is set.
Note
As this keto cottage cheese flatbread is made with cocoa powder, it can be challenging to determine when it’s fully cooked. The best indicator is when the edges turn a golden brown color. This usually happens after about 10-15 minutes in the oven, but keep an eye on it as oven temperatures can vary.
Let it cool before slicing and adding any toppings.
Serving Ideas
This cottage cheese bread is the perfect base for any toppings you like.
Whipped Cream and Strawberries
Top your cottage cheese flatbread with a generous dollop of fluffy whipped cream and fresh, juicy small pieces of strawberries for a classic combination that’s both sweet and refreshing.
Chocolate Mousse and Peanut Butter
For a rich and indulgent twist, spread a layer of smooth chocolate mousse over your cottage cheese low carb flatbread, then add a drizzle of creamy peanut butter for a perfect balance of flavors.
Looks delicious. Can’t wait to give it a try!
I’m trying this for the first time. I am using sugar free cream cheese pudding and mixed it with half cottage cheese and milk.
